Homemade Golden Syrup

Ingredients

3 cups of sugar (brown or white)

1 1/4 Cup of water

2 tablespoons of lemon juice

Directions

  1. Over medium heat in a saucepan averaged in 1ltr capacity add all the ingredients and with a wooden or silicone spoon gently stir until the sugar has melted.
  2. Reducing the heat to a slow and very gently simmer without stirring, allow the liquid to reduce and become golden in colour.
  3. Do not stir at this stage as it will start to form sugar crystals and you may end up with crunchy syrup.
  4. Test the consistency by dripping some on a cool side plate. If you tilt the plate and it slowly runs down you have syrup! YAY!
  5. Allow to cool completely and store in a glass lidded jar or  any other airtight container.  Remember this thickens more as it cools completely.
  6. This recipe will make about 750ml of syrup which stores in the fridge (or not) for a good 3 months. Depends if it will lasts that long with kids and hubby around.

*The cooking time may vary don’t fret about it to much if you feel it takes to long.  Use the time to just sit and enjoy a cup of coffee on the couch.

 *If you decide to use brown sugar, which is my preferred choice, it will not go much darker in colour so I tested it with the drip method as explained above to make sure I have the right consistency.
